I was really enjoying seeing the Shell icon instead of the Windows icon on my start menu. It disappeared after the update to Windows 8.1 how do I get the little shell back?

Do you mean you installed the major Spring Update 1 for Windows 8.1 and the Shell icon disappeared after it?
Make sure you are using the latest Classic Shell 4.0.6. If the menu isn't starting, do a Repair installation.
If the Start Menu is running but you only lost the icon, right click the Start button -> Settings and check "Replace Start Button" on the Start Menu style tab.
