Hello, we have been trying to hide the "Start Menu" and the Settings options from our Windows 10 menu via local GPO without any success.

I have gone through all the GPO settings and i cannot hide these options. I have attached a screenshot to confirm the 2 options we are trying to hide.

Any help would be greatly appreciated.

The start menu shortcut is controlled by the setting "Show Start screen shortcut". To remove the settings menu you have to provide a custom item list for the "Menu items for classic menu with one column" setting.

Please see this topic: viewtopic.php?f=7&t=3374#p18752 for information on customizing menu items using Group Policy. "Settings" is a menu item. The policy you will have to use is: Menu items for classic menu with one column. That thread has instructions.

"Start Menu (Windows)" is itself a Group Policy setting called "Show Start screen shortcut" as Ivo mentioned.
