Would have been nice if Individual Microsoft Office Applications would also be grouped under a folder "Microsoft Office 2016"

This is possible. Instead of right clicking, drag the "Microsoft Office" folder to the pinned area. This will create a symbolic link that expands as a submenu.

In case of earlier offices like 2007 "Microsoft Office" folder exists, however for Office 2016 the "Microsoft Office 2016" folder does not seem to exist. I was looking for a folder by the name of "Microsoft Office 2016" ; under which all individual Applications are grouped.

You can right click any other pinned item and create a new folder.

It will be faster to copy all the Microsoft Office shortcuts to this new folder using Windows Explorer.

If you are using Windows 7 style of the menu, go to %appdata%\ClassicShell\Pinned (C:\Users\<user name>\AppData\Roaming\ClassicShell\Pinned) as that is the default Pinned folder. Inside it you can create folders and copy shortcuts as you want.

The folders are created by the installers, not by the start menu. Microsoft has decided to organize their shortcuts differently in Office 2016. If you don't like it, it is up to you to rearrange them.
