Because of declining eyesight, I must run Windows 7x64 Home Premium with all the fonts set to Seqoe UI Semibold. However, I've not found a way to force the flyout/popup menus to be Semibold [1]. Their menu labels refuse all attempts to alter their native display font.

Does anyone have insights into forcing W7's native menu fonts to display differently -- i.e., use a different font than Segoe UI uses for [1] Aero Taskbar titles, or the Tahoma font which Classic Theme uses for its item labels?

[1] A toolbar can be turned into a pop-up menu by reducing its length to only a short 1-3 character titles, which, when clicked, will pop-up the labeled Toolbar items. This is also true of flyout menus. For toolbar item lables, the default Aero font is Segoe UI, and the default Classic Font is Tahoma. I've not been able to change these.

I see. Changing the "Menu" font from Advanced Appearance settings doesn't seem to affect the flyout system menus created from Taskbar toolbands at all.

Your best alternative in that case would be to add whatever folders you access via taskbar toolbars into the Classic Start Menu as it's font can be changed.
