Is it possible to open these with one click? these have submenus but i think its not necessarily to double click. A single click is simpler

Yes it's possible. Go to Customize Start Menu tab in Start Menu settings, locate and double the item you want to single click and check the "Split Button Item" checkbox for it. That will turn it into a split button - with a menu and yet the item opens by single click. If you don't want the items to show as a menu, then instead of 'Split Button Item' you can just check 'Don't Expand' checkbox.

Thank you! It works for everything else except the sub folders in all programs. But its not a big deal

The subfolders inside All Programs are not menu-defined items, they're file system objects. Also, some users (like myself) use single click to expand the menu and I disable the hover to expand (by increasing the Menu Delay). There wouldn't be a way to do that if subfolders open by single click.
